I went in expecting Overcooked meets restaurant tycoon. Instead, Sushi Bar Express is pure reflex management: dishes arrive, you prep them against a countdown, customers judge your speed and quality. There's no supply chain, no hiring mechanics, no meaningful upgrades. You're essentially playing a sequence of timed minigames with a sushi coat of paint. The appeal is immediate and narrow: if you enjoyed the frenzy of Diner Dash or Cooking Mama, this scratches that itch cheap and cheerfully. The problem is longevity. Once you've cleared a few levels, the difficulty ceiling hits fast and hard without introducing new systems to master. No build variety, no strategic decision-making, just faster reactions required. For strategy fans like me, this feels less like a sim and more like a mobile game that somehow ended up on PC. It's not broken; it's just thin.
